One way to decrease your carbon footprint is to eat less meat, so we have decided to add more beans to our diet.
I was gobsmacked when I read that a report published by the United Nations Food and Agriculture Organization in 2006 found that livestock generates 18% of the Earth’s greenhouse gas emissions, while transportation is responsible for only 11%. Did you know that it takes 5,000 gallons of water to produce 1 pound of beef but only 25 gallon to grow a pound of wheat? I sure didn’t.
Mark Bittman, who is not a vegetarian, wrote a very eye opening article entitled Rethinking the Meat-Guzzler that has really started to change my views on meat consumption. This is not an ethical treatment of animals issue but a major environmental concern for me.
The Rogue gets a deer-in-the-headlights look when I even mention this subject – he likes meat – a lot – but he has agreed to do more research with me and we will make more choices later. Until then, it is Meatless Monday here in our Home Green Home.

Hmmm. That’s a whole helluva lot of water being used. I’m with The Rogue on this one, I’m a carnivore and love my meat, specifically beef. I don’t know if I could give up meat all together… Something to consider, though.
Oh, I do enjoy meat too, which is why it is such a conflict for me. I grew up with the whole “It’s not a meal unless there is meat” mentality, which is hard to get over sometimes.
I will never give up smoked prime rib – evah!
